
Being healthy is something very hard to do. Especially if you’re someone who likes their food. Curry coconut rice is a healthy dinner that will not only leave you full but also satisfied. It’s only is 424 calories and it is low in carbs and fat!
Ingredients
⅔ cup cooked brown rice
5 cherry tomatoes, halved
⅓ cup light coconut milk
¼ teaspoon curry powder
Salt (to taste)
Pepper (to taste)
1 cup baby spinach, loosely packed
2 tablespoons nutritional yeast flakes
1 teaspoon olive oil
1 large egg
1 tablespoon roasted sunflower seeds
Instructions
Heat Rice, tomatoes, coconut milk and curry powder on high heat. Bring it to a boil and then Reduce the heat to a simmer and cook for 3 minutes. Season with salt and pepper (or whatever seasoning you want). Stir in spinach and yeast flakes. When spinach is wilted remove from heat and set aside.
In a small nonstick skillet over medium heat, heat oil. Crack egg into skillet , season with salt pepper and reduce heat to medium heat. Cook until egg white is set but yolk is runny, about 3 minutes
Top rice with sunflower seeds and and egg.
