Culinary Corner: Peppermint Bark Brownie Bites

Christmas is just around the corner and everyone knows how much fun holiday-themed recipes can be to make. Whether you’re making cookies with Grandma and the family, or just making something for your own family, we’re bringing you a recipe you might be motivated to make this season: Peppermint Bark Brownie Bites. A blend of a sweet, chocolate brownie with the slight zing of peppermint combine to make this very festive, very tasty dish.

Ingredients

  • 5 tablespoons butter
  • 2 ounces unsweetened chocolate
  • 1 ounce semisweet chocolate
  • 2/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2/3 cup flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 24 peppermint bark candies (I used Hershey’s Peppermint Bark Bells)

 

Instructions

  1. Preheat oven to 350 degrees. Grease mini muffin pan and set aside.
  2. In a double broiler, melt butter and chocolate over simmering water. Stir frequently, being careful not to burn.
  3. Remove from heat and stir sugar into chocolate until well blended. Let cool to just warm.
  4. Beat egg and vanilla into chocolate mixture until smooth.
  5. Add flour, baking soda and salt to chocolate mixture and stir until just combined.
  6. Spoon a tablespoon of batter into each muffin cup well.
  7. Bake for 10 minutes or until middle is almost set. Immediately press a peppermint bark candy into each brownie bite so that the top of the candy is flush with the top of the brownie.
  8. Completely cool in muffin tin before removing.
