Culinary Corner: Zucchini Noodle and Seasoned Shrimp

With summer approaching quickly, people are trying out their new diets to achieve that “beach body.” When thinking of dieting, people often think of eating as little as possible or having to scarf down a boring salad and tell yourself that you’re full, but eating healthy can be just as efficient and yummy!

Serving size: 2

Prep time: 10 minutes, Total cook time: 20 minutes

Ingredients:

  1. 2 Zucchini
  2. 1/2 cup of shredded mozzarella
  3. 8 oz of shrimp (used- XS cooked, devained, and tail off)
  4. 2 tbsp olive oil
  5. 1/4 cup of water
  6. 2 tbsp garlic powder
  7. Salt
  8. Pepper
  9. 1 tbsp oregano

Directions:

  1. Rinse and cut the zucchini in skinny strips (as noodle-like as possible) IMG_9087 USE
  2. Add 1 tbsp of oil to a large pan, put on medium heat, and add zucchini and stir for about a minute
  3. Add water to pan and let sit for about 5 minutes or until soft
  4. Once soft, drain any extra water, then add garlic powder, salt, pepper, oregano, and cheese
  5. Put zucchini aside in a serving bowl and keep warm
  6. Drain shrimp in a colander with cold water for about a minute to defrost and soften
  7. Add 1 tbsp of oil to the pan and put in shrimp, let it cook for about 10-12 minutes while occasionally stirring it  IMG_9099 USE
  8. Once cooked, add preferred seasonings (basic- salt, pepper. what I used- Natures seasons, Worcestershire pub burger seasoning)
  9. Put shrimp on the zucchini noodles and it’s ready to serve!FullSizeRender USE
