Cullinary Corner: Simple Vegetarian Curry

Simple Vegetarian Curry

 

This is a very straightforward recipe without a lot of bells and whistles. Obviously, many different things can be added to liven up this dish, but, for a simple easy curry, the following formula works very well.

Total Time: 1 hour

Ingredients:

1 tbsp olive oil

1 whole head of cauliflower chopped

½ head broccoli chopped

1 medium onion chopped

3 cloves of garlic sliced or 2 tbsp of garlic powder

2 potatoes skinned chopped and boiled until just about cooked

2 cups chicken broth

2 tbsp all purpose flower

1 tbsp butter

2 tbsp curry powder

1 tbsp cumin

Peel your potatoes and get them in a small pot of boiling water. While the potatoes are cooking prep the remaining ingredients. Chop broccoli, cauliflower, onion and garlic. When the potatoes are just about cooked (check the doneness with a fork) remove from water and allow to cool for a minute or two.

Heat olive oil and add onion and garlic. When onion starts to turn translucent, add veggies, potatoes, butter, curry powder and cumin and stir over medium heat for a minute or two. Add the chicken stock and stir. Cover dish, reduce heat to medium/low and allow to simmer for no less than ten minutes. Finally, stir in flower and allow about seven to ten minutes to thicken.  Serve warm and enjoy.
