Culinary Corner: Roasted Garlic Pasta Salad

Roasted Garlic Pasta Salad

Total time: 30 min.
Ingredients:
-1 tablespoon minced garlic
-1 lb. pasta shells
-15 oz. ricotta cheese
-1/4 cup grated Parmesan
-salt & pepper
-1 pint of cherry tomatoes
-3 cups of baby spinach
1. Cook the pasta using the instructions on the side of the box.
2.Dice the spinach and cut up the tomatoes.
3. In a medium bowl, add the minced garlic, ricotta cheese, and salt and pepper and stir. When the pasta is finished cooking, add 1/2 cup of the pasta water to the mixture and mix until the sauce becomes creamy.
4. Add the pasta shells to a large bowl, then add the tomatoes, spinach, and sauce. Stir. Add Parmesan to top. Place in refrigerator and eat cold. 🙂
